Mmm, Yes, another peanut butter recipe, but it’s okay, I love peanut butter cookies! 😉
This cookie makes an excellent cut out cookie exchange out for your regular sugar cookie cutouts. This recipe is from Cookies! A Cookie Lover’s Collection. (It’s originally Peanut Butter Dinosaurs page 35)
3/4 cup butter softened
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon vanilla
2 1/2 cups all purpose flour
1/2 teaspoon salt
In a large mixing bowl, combine butter, nut butter, sugarS, egg and vanilla. Beat at medium until light and fluffy. Add flour and salt. Beat at low speed until soft dough forms.
Divide dough in half. Cover with plastic wrap. Chill 2 to 3 hours, or until firm.
Heat oven to 350 degrees. On a well floured surface, roll half of dough to 1/4 ” thickness (dough will be fragile). Using 4 -5 ” cookie cutters, cut shapes into dough. I like to go with a theme for the season. 🙂
Place the cut-outs 2″ apart on an ungreased cookie sheet. Repeat with remaining dough. Bake 10-13 minutes, or until set. Cool completely. Prepare frosting as you like, decorate & let dry all the way … then eat!!
