I know that might be obvious, but biscuits are easy. So much so that most people have a basic version memorized. So here’s a easy-peasey version that after a few uses you’ll have it memorized too. 2 c flour (all-purpose) 4 tsp baking powder ½ tsp salt ⅓ c shortening ⅔ c milk Preheat oven to 450° Mix flour thru shortening on low for 1 minute. Slowly mix in milk until just clingy. do not over beat Pull out dough & on a lightly floured surface, knead for about 20 seconds. Roll out to ½” thick. Cut out & bake on a cookie sheet. Bake 12 – 15 minutes. Serve immediately. I would suggest checking your baking powder expiration date because otherwise they’ll fall flat!

I’ve been in a serial spiritual funk currently & I say serial because it stems from occurring bouts of mild depression. I am not saying I’m clinically depressed because it is so serious an issue & I don’t want to marginalize it. (Side note: Spiritual Depression by Martyn-Lloyd Jones is a great resource) But I have my dark periods & they’re coated with depressed thinking, despair, frustration, apathy & weariness. I feel this one might be recessing & that brings such joy to me.
But, until its behind me I’ll share my focus verses.

An interesting view on depression (non biblical & fictional) is the book Mr. Chartwell, well worth a read.
This last weekend I went a traveling (more details next week) & visited two towns not pronounced the way they are spelled. I was mocked for my pronunciation difficulties by my Dear family. Four places in Texas I know are said different than spelled.
Mexia or Mahayah?
Boerne or Bernie?
Buda or Boodah?
Gruene or Green?
All are pronounced the second way but spelled the first way. Where have you traveled that was a speaking nightmare?
I’ll end this with a joke. Two men are driving to South Texas. They start to argue about how to pronounce Mexia. One swore it was Mexia & the other swore it was Mahayah. They stopped for lunch at the local DQ for lunch. Exasperated, one of the men turns & looks at the waitress. He tells her to tell that fool how you pronounce the name of this place! She turns, looks, and lowers her head to his and says real slowly, “it’s called dare-ee queeen.”
