Oodles of Cookies!

Cookies. Something we all love during the holiday season. Everyone has their favorite flavor, mine is the 1979 Southern Living rolled sugar cookies.
Everything from snickerdoodles, to thumbprints, to iced sugar cookies to peppermint schnapps. The next three Tuesdays will be cookie crumbtastic recipes anyone can make.

What is your favorite holiday cookie recipe?

Vodka, Brandy, Bourbon, Whiskey … but not sauced!

I found a new recipe that I like that involves using liquor in the dough, new, and unusual for me! I have never used vodka to make crust crustier. But it got me thinking, how many recipes have I done that required me to buy alcohol? I could count on both hands the recipes I have gone and bought itty bitty ridiculous bottles of liquor.

 

This raises the question: What recipes have you had to go buy your bottles of liquor for? Tequila, bourbon, brandy, whiskey, vodka…?

Favorite Food Tracker

Favorite Food Tracker

I know, a food tracker on tasty tuesday?! But I seriously use this tracker, and it is online! It is free and it really can help keep you on track. You can enter your inches, your weight, your favorite recipes (it breaks down the calories for you per serving!) and every eaten and drank thing daily. It gives you a number of calories to shoot for, and adds some back if you are active. For you who need to drink more water, it can help you total that as well. I really like the app, it does not pick on your for your choices, but it does make food journaling that much easier and appealing. Give it a shot, it might just help you loss, gain, or keep your weight!

Tater Salad with Vinegar

Mmm… best picnic side dish is definitely potato salad, not Polk salad (because I’m not Annie) but potato.
I tried a new potato salad out on my  guinea pigs, er, coworkers. I adapted from All Recipes

Red White & Blue Potato Salad

1 lb red potatoes
1 lb purple fingerling potatoes
1 lb white fingerling potatoes
Extra virgin olive oil
Salt, pepper to taste
½ purple onion, chopped
2 tsps celery seed
1 TBSP granulated garlic
2 TBSPS dill weed
2 spicy dill pickles diced
2 TBSPS Dijon mustard
1 c sour cream
⅓ c mayonnaise
1 tsp white vinegar

1. Preheat the oven to 400°. Chop potatoes into bite size wedges (about the size of your thumb) skins on. Lay 1 layer deep on a foiled baking sheet with a rim. Drizzle lightly with olive oil, salt & pepper. Cook for 30 minutes until just roasted.

2. Mix onion through vinegar in a large bowl until well blended & smooth.

3. Cool potatoes slightly.

4. Thoroughly blend potatoes & sauce. Coat well & refrigerate for at least three hours. Add more salt & pepper to taste.

I got to say, it was pretty great, a lighter feeling & spicier kicking salad. Definitely a fan.

Recipe Collection

I’ve been quiet lately but been a little busy, Sickish even. But I was cleaning off & dusting my desk when I ran across my recipe box gift. I was collecting recipes to make a box for a wedding gift. But I never gave it; whoops! But I have another wedding or two coming up so I’m going to get it wrap it up.

Recipes? I need them in the five major categories: main dishes, sides, desserts, sauces/condiments, & breads/salads.

So…help!

Stealing recipes; it’s what I do!

I’ve never thought you had to have all your own homemade recipes to be creative or classy. Sometimes in life someone does something so well you can’t help but copy cat! I found said item on smitten kitchen’s blog. I had a friend celebrate their 25th last week & I was itching to create. So I begged them (truly) to let me make a dessert item for them. I lucked out & was given two classic ingredients: chocolate & peanut butter!
So I went to my trusty search engine & got to searching. Lo & behold too many delicacies popped up on my screen. A little drool may have dropped. But near the top two blogs stood out: one had gathered her favorite chocolate & peanut butter desserts (many came a close second) & another had a photo of this gorgeous layer cake playing peekaboo.

Obviously, the cake won out.
I erred twice of importance.
1. When freezing said cake layers, do not stack even with wax paper & zippy bags. No matter what.
2. Do not lose track of sifted powdered sugar in the peanut butter cream cheese frosting, it looks tacky (legitimately).
Oh maybe one more almost error, stir the ganache constantly. It was a close save. Truly.

But hey, people devoured this cake like it was the air they breathed. That is a happy baker. 🙂
Chocolate Peanut Butter Ganache Celebration Cake

What the Wookie?!

Chilled Tauntaun Salad (chicken salad)
1 1/2 lb chicken boneless skinless
Poultry seasoning
4 fresh Basil leaves
3 Tbsp dill relish
1 tsp granulated garlic
1/4 c mayo

Bring a large stock pot of water to boil. Salt & add basil. Add chicken, poultry seasoning & boil til white through. Drain, (save for broth if you like) and shred chicken with two forks. Add dill & mayo, stir till thoroughly mixed. If too dry add more mayo. Add garlic & blend. Chill over night. Serve with Alderaan suns (round crackers). Sub miracle whip if you like. Add more mayo for a dip like quality.

Wookie Fingers (chocolate no bake cookies)
3 Tbsp cocoa powder
2 c sugar
1 stick butter
1/2 milk
3 c oats
1/2 peanut butter
1 tap vanilla
Peanut halves for decoration

Bring cocoa, sugar, butter, milk to a rolling boil for 2 minutes exactly. Take off heat, add oats, peanut butter & vanilla. Stir to blend completely. On wax paper drop ‘dough’ by teaspoonfuls in thin strips. Use all ‘dough’. Before cooling place peanut halves on tips of cookies. Cool & serve.

Lightsabers (dipped pretzel rods)
40-50 long pretzel rods
4-5 cubes white almond bark
1 tsp oil
Sprinkles or food dye

Melt bark & oil over low in a double boiler. Stir until smooth. (You can microwave in 30 sec intervals but it’s grittier.) Remove from heat & coat pretzels 3/4. Tap tip in pan to shake off extra bark. Coat in sprinkles of light saber colors & cool on wax paper. Space evenly. If bark hardens rewarm on low until smooth. If dyeing blend color after removed from heat, dip & sprinkle.
